Easy Coffee Cake

This is by far the easiest recipe to make, and potentially cheating given that boxed cake mix is used, but it's so delicious. I've listed this recipe under desserts, but I also eat it for breakfast anytime I make it (don't ever let anyone tell you that you can't have cake for breakfast).

 

what you'll need:

  • 1 box yellow cake mix

  • 1 box instant French vanilla pudding

  • 1/2 cup canola oil

  • 1 cup sour cream

  • 4 eggs

  • 1 teaspoon cinnamon

  • 1/3 cup sugar

yields: 8 servings

cook time: 1.5 hours

 

instructions:

  1. Preheat oven to 350 degrees.

  2. In a mixer, combine cake mix and pudding mix. Add oil and sour cream. Mix until thoroughly combined. Add eggs to batter one at a time.

  3. Sprinkle a greased Bundt pan with a portion of the cinnamon sugar. Pour in the batter, and sprinkle the top of the cake with more cinnamon sugar.

  4. Bake for 45-50 minutes, or until a toothpick comes out clean.

  5. Allow to cool in the pan for 10 minutes before turning onto a cooling rack. While still warm, sprinkle the cake again with additional cinnamon sugar.

Enjoy warm with coffee in the morning, vanilla ice cream for dessert, or just by itself for an afternoon pick-me-up.
