Sautéed Balsamic Brussels Sprouts

You can of course buy pre-shaved Brussels sprouts for convenience, but I find that if time is not an issue, buying them whole and cutting them yourself tends to come out much better.

 

what you'll need:

  • 2 tablespoons extra virgin olive oil

  • 1 shallot, thinly sliced

  • 1/2 tablespoon fresh rosemary

  • 3-4 garlic cloves, minced

  • 4 strips turkey bacon

  • 1 pound brussels sprouts, thinly sliced

  • 1 tablespoon balsamic vinegar

  • 1/2 tablespoon Diamond Crystal kosher salt (or 1 teaspoon table salt)

  • balsamic glaze, to garnish

  • freshly grated parmesan cheese, to garnish

yield: 4 servings

total cook time: 20 minutes

 

instructions:

  1. Heat olive oil in a large skillet until warm. Sautee shallot slices until soft and translucent. Add fresh rosemary and minced garlic.

  2. Cut turkey bacon into small pieces and add to the pan. Cook bacon until just done, then add the shaved brussels sprouts. Add salt.

  3. Once brussels sprouts have cooked for about 10 minutes and are starting to soften, add of balsamic vinegar. Continue cooking for an additional 2 minutes.

  4. Taste for seasoning and add additional salt if needed. After plating, add a drizzle of balsamic glaze and a generous amount of freshly grated parmesan cheese.
