My favorite hummus recipe (from my mother), with an added twist of roasted red peppers.
what you'll need:
15.5 oz can garbanzo beans, drained
1 small lemon, juiced
4-5 garlic cloves
1/2 jalapeño, seeds removed (unless you like some extra kick)
1/8 cup good olive oil
2 teaspoons Tahini
6 oz roasted red peppers (from the jar; ends up being about 1 whole pepper)
salt, to taste
yields: 2.5 cups of hummus
total cook time: 15 minutes
instructions:
Blend all ingredients in a high-powered blender until smooth. Taste and add additional garlic, tahini, salt, or lemon juice to your liking.
