Honey Roasted Carrots


 

what you'll need:

  • 8-10 medium sized carrots, peeled

  • 2 tablespoons olive oil

  • 1 1/2 tablespoons honey

  • 2 teaspoons Diamond Crystal kosher salt (or 1 teaspoon table salt)

  • 3-4 cloves garlic, very thinly sliced

  • several sprigs fresh thyme

yield: 4 servings

total cook time: ~45 minutes

 

instructions:

  1. Preheat oven to 410 degrees.

  2. Slice carrots about 1/4 inch thick. Toss in a bowl with olive oil, honey, salt, and thinly sliced garlic

  3. Spread carrots in one even layer on a covered baking sheet. Roast in preheated oven for 20-25 minutes or until tender. Halfway through baking, mix the carrots to avoid burning.

  4. Immediately after removing from the oven, toss carrots with fresh thyme. Serve warm.
