what you'll need:
8-10 medium sized carrots, peeled
2 tablespoons olive oil
1 1/2 tablespoons honey
2 teaspoons Diamond Crystal kosher salt (or 1 teaspoon table salt)
3-4 cloves garlic, very thinly sliced
several sprigs fresh thyme
yield: 4 servings
total cook time: ~45 minutes
instructions:
Preheat oven to 410 degrees.
Slice carrots about 1/4 inch thick. Toss in a bowl with olive oil, honey, salt, and thinly sliced garlic
Spread carrots in one even layer on a covered baking sheet. Roast in preheated oven for 20-25 minutes or until tender. Halfway through baking, mix the carrots to avoid burning.
Immediately after removing from the oven, toss carrots with fresh thyme. Serve warm.
