You will never purchase grocery store pesto again after you realize how easy (and more delicious) it is to make your own. I like to make a big batch, and then freeze leftovers in an ice cube tray to have ready at any time.

what you'll need:
2 cups Tuscan kale, de-stemmed
1/2 cup fresh basil
2 cloves garlic
1/2 cup nuts of your choice (I typically use almonds, pine nuts, or walnuts)
1/2 cup grated parmesan cheese
1/2 cup olive oil
1 teaspoon Diamond Crystal kosher salt (1/2 teaspoon table salt)
juice and zest of 1 lemon
yields: 1 cup
total cook time: 15 minutes
instructions:
Combine all ingredients in a blender or food processer and blend until smooth. Add additional olive oil or lemon juice 1-2 tablespoons at a time if the blender is having difficulty with the mixture. Taste for seasoning and add more salt, garlic, and cheese to your liking.
