Grilled Amaretto-Soaked Peaches

Nothing says summer like grilled fruit, and these grilled peaches are my personal favorite. To me, it just tastes like a warm summer evening. This may be classified as a dessert, but the main ingredient is fruit. So it's a health food. Don't let anyone tell you otherwise.



 

what you'll need:

  • 4 ripe peaches

  • 1 1/4 cup packed light brown sugar

  • 1/2 cup amaretto

  • 1/2 tablespoon vanilla extract

  • 1/2 cup water

  • 2 tablespoons salted butter

  • 1 cup pecans

  • vanilla ice cream and fresh mint sprigs, for serving

yield: 4 servings

total cook time: 20 minutes (plus 1-4 hours for the peaches to marinate)

 

instructions:

  1. Slice peaches in half and remove pits. Pierce each half a few times with a fork, which will allow the sauce to better absorb into the peaches. Place peach halves in an even layer in a large baking dish or other shallow container.

  2. In a small saucepan, combine 1 cup of the brown sugar, amaretto, vanilla extract, and water. Over medium heat, stir continually until the sugar has dissolved and the mixture comes to at low boil. Reduce heat to low and simmer for about 10 minutes. Pour the sauce over the peaches. Cover and place in the fridge for at least one hour and up to four hours.

  3. While the peaches marinate, melt the butter in a skillet over medium heat. Add the remaining 1/4 cup of brown sugar and stir until the sugar has melted (be cautious not to let it burn here). Add pecans and ensure that each is well coated in sugar. Remove from heat and place nuts in an even layer on wax or parchment paper.

  4. Once ready to serve, heat your grill to a medium-low setting. While the grill is heating, place the peach halves on a separate plate. Heat the remaining brown sugar-amaretto sauce on the stove to prepare for serving.

  5. Grill peach halves until warmed through and grill marks appear. Serve with vanilla ice cream, the warm brown sugar-amaretto sauce, buttered pecans, and fresh mint.
