Citrus and Herb Baked Cod

An amazing light and flavorful baked cod that's perfect for spring or summer.

what you'll need:

  • 4 fresh cod filets (or substitute for your fish of choice)

  • kosher salt

  • 1 tablespoon butter

  • 2 cloves garlic, thinly sliced

  • 6-8 thin orange slices

  • 6-8 thin lemon slices

  • 8 sprigs fresh dill

  • 4 tablespoons sauvignon blanc or other dry white wine

  • 2 radishes, halved and thinly sliced

yield: 4 servings

total cook time: approximately 30 minutes

 

instructions:

  1. Preheat oven to 410 degrees

  2. Place each filet of cod on a piece of parchment paper and lightly salt. Dot each filet with butter. On each filet, layer the thinly sliced garlic, citrus slices, and fresh dill. Spoon over one tablespoon of wine onto each filet.

  3. Fold the parchment paper in a way that creates a package for each piece of fish. I find that the best method is to meet each long end of the paper together and fold down; then, tuck the ends under the bottom (see photos below)

  4. Place each package on a baking sheet, and bake for 10-12 minutes, depending upon the thickness of the filets.

  5. Remove from the oven and carefully open each parchment package. Top with the thinly sliced radishes before serving.
